Another thing, is Grave keeper considered a Race? From the story, people don't treat them as human?
Then what about how we distinguish human and undead? Note that all undead are human once. I got confused when you change Youki and Anna to human. If they are living human, Hampnie won't kill them or rather immobilized them.
Then again, I don't know how he distinguish them.
Somehow I still believe that Youki and Anna is human. However, I also have no proof or sufficient knowledge to clearly distinguish between Human and Undead if they keep living like a Human.

I don't know if this will be covered in Manga. I heard that Youki is not an undead! I would think that it is just a random rumor but together with a line from official site (spoiler? lol) "Youki has a different aura from the other villagers", it seems more legit.
So he would be like Yuri (with dead wife, wanted to keep her alive).
Well, since there is no solid proof about that, and from episode 3 is stated that all villagers are undead, so it's safe to assume that he's undead as well for now.
But, somehow, I also feel that your guess is right, since during the anime or manga, I keep thinking that he is actually still alive.
Isn't grave keeper a separate race? Since they are the only one who can put the undead back to grave. Also...Hampnie said how Ai is a hybrid between human and grave keepers. And also how normal grave keeps aren't able to reproduce. So, it should be a different race, right?
